Truong Du Tri, the coffee shop owner, shared with the media that the idea of making coffee with pork offal broth came from a simple but passionate desire: to promote his hometown's specialties.
"Red braised pork intestines is a very popular dish and the pride of Giang Du people. I thought of combining it with coffee, not only to promote the shop but also to introduce the city's signature delicacy to more people, especially tourists or people from other places," he explained.
To ensure quality and authentic taste, the intestines are purchased from a famous local restaurant that specializes in traditional red stewed intestines. The cafe then uses only the core, most quintessential broth. Truong Du Tri revealed that to achieve the perfect balance of flavors, he and his team had to go through many meticulous tests. Finally, they found the "golden number": measuring exactly 6 grams of pork intestine broth for each cup of coffee.
"We want customers to feel the unique flavor of pig intestines but still retain the characteristic coffee flavor. The taste of this dish is quite strange, like salty cheese, a mixture of salty and sweet - a type of flavor that is very popular in the modern culinary world, especially in creative drinks," Truong Du Tri describes his unique product.
Skyrocketing sales and mixed reviews from diners
Since this âuniqueâ drink was widely shared on social media in early June, the cafeâs sales have more than quadrupled. Surprisingly, about 80% of customers who come to the cafe have expressed curiosity and want to try this unique coffee, despite initial skepticism. This shows the tremendous power of viral trends on social media and the willingness of young people to try new things.
Customers' reactions to "pig intestine coffee" are as varied as its taste: A female tourist from Chengdu, Sichuan, shared with the media: "I am a coffee lover and also love to explore new dishes.
