Mallet fish cooked in sour soup and braised by Le Tuan Khang are two daily dishes with Western characteristics, the cooking method is quite simple. The first is to preliminarily prepare the mullet by blanching it in boiling water, adding a little granulated salt, scraping off the viscosity, washing it thoroughly and then cutting it into small pieces. For sour soup, you can use dried tamarind or lemon mixed with 1 liter of boiled water, season with salt, a little sugar, chili peppers and let the preliminarily cooked mullet fish cook thoroughly.
Then add raw bean sprouts, tomatoes, pineapples, okra... then season again to taste and turn off the heat, finally sprinkle with cinnamon leaves (or celery) to create a fragrant aroma.
Mallet fish is also often prepared as braised rice. Preliminarily processed fish is cleanly cut into pieces, marinated in colored water, sugar, fish sauce, salt. Marinate the fish for about 30 minutes to absorb the spices and start stocking on low heat for about 3 minutes for the fish meat to firm. Continue to add cold water (or fresh coconut water) over high heat until boiling, to add 2-3 fresh chillies.
Wait for about 10 minutes to boil, then season again to taste, cook for about 10 minutes, then add green onions and turn off the heat. In some places, the fish can be fried and then seasoned, before stocking. Braised mullet fish is often served with hot white rice, adding some raw vegetables or cucumbers.
In the past, people in the West used to raise mallet fish in ponds a few hundred meters away from home, then "pepper bridges". Nowadays, to ensure aesthetics and environmental sanitation, these "pepper bridges" are rarely seen on the main roads between communes and hamlets.
